
Ingredients:
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup cooked spinach (frozen works too, thawed and well-drained)
- 2 tablespoons cream cheese, softened
- 1 tablespoon sour cream or Greek yogurt
- 1 clove garlic, minced (optional)
- Pinch of salt and pepper
- Crushed red pepper flakes or chopped green onion (optional topping)
Instructions:
- Preheat Oven:
- Set your oven to 375°F (190°C).
- Line a baking sheet with parchment paper or a silicone baking mat.
- Make the Spinach Mixture:
- In a bowl, combine the cooked spinach, cream cheese, sour cream, garlic, salt, and pepper.
- Mix until creamy and well combined.
- Assemble Crisps:
- On the baking sheet, place small piles (1 tablespoon each) of mozzarella and Parmesan mixed together.
- Flatten each pile into a thin circle.
- Add a small spoonful of the spinach dip mixture to the center of each cheese circle.
- Sprinkle a little more cheese on top to “seal” it in.
- Bake:
- Bake for 10–14 minutes, or until edges are golden and crispy.
- Cool:
- Let them cool for a few minutes to crisp up even more.
- Use a spatula to transfer them to a cooling rack or plate.
Tips:
- For extra flavor, mix in chopped artichokes or a pinch of onion powder.
- Store leftovers in an airtight container and re-crisp in the oven or air fryer.
