Spinach Dip Cheese Crisps

Ingredients:

  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup cooked spinach (frozen works too, thawed and well-drained)
  • 2 tablespoons cream cheese, softened
  • 1 tablespoon sour cream or Greek yogurt
  • 1 clove garlic, minced (optional)
  • Pinch of salt and pepper
  • Crushed red pepper flakes or chopped green onion (optional topping)

Instructions:

  1. Preheat Oven:
    • Set your oven to 375°F (190°C).
    • Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the Spinach Mixture:
    • In a bowl, combine the cooked spinach, cream cheese, sour cream, garlic, salt, and pepper.
    • Mix until creamy and well combined.
  3. Assemble Crisps:
    • On the baking sheet, place small piles (1 tablespoon each) of mozzarella and Parmesan mixed together.
    • Flatten each pile into a thin circle.
    • Add a small spoonful of the spinach dip mixture to the center of each cheese circle.
    • Sprinkle a little more cheese on top to “seal” it in.
  4. Bake:
    • Bake for 10–14 minutes, or until edges are golden and crispy.
  5. Cool:
    • Let them cool for a few minutes to crisp up even more.
    • Use a spatula to transfer them to a cooling rack or plate.

Tips:

  • For extra flavor, mix in chopped artichokes or a pinch of onion powder.
  • Store leftovers in an airtight container and re-crisp in the oven or air fryer.
