Ingredients
- For the Salmon & Shrimp:
- 2 salmon fillets (skinless, cut into bite-sized pieces)
- 8-10 large shrimp (peeled and deveined)
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 clove garlic (minced)
- For the Alfredo Sauce:
- 2 tablespoons butter
- 3 cloves garlic (minced)
- 1 1/2 cups heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon fresh parsley (chopped, for garnish)
- For the Pasta:
- 12 oz fettuccine or pasta of choice
- Salt for pasta water
Instructions
- Prepare the Pasta
- Cook pasta according to package instructions in salted water until al dente. Drain and set aside.
- Cook the Salmon & Shrimp
- In a large skillet, heat olive oil and 1 tablespoon butter over medium heat.
- Season salmon and shrimp with salt and pepper.
- Add the salmon pieces to the skillet and cook for about 3-4 minutes on each side until golden and cooked through. Remove and set aside.
- In the same skillet, add the shrimp and cook for 1-2 minutes on each side until pink and opaque. Remove and set aside.
- Make the Alfredo Sauce
- In the same skillet, add 2 tablespoons of butter and minced garlic, cooking until fragrant (about 1 minute).
- Pour in the heavy cream, stirring constantly. Bring to a gentle simmer, then lower the heat.
- Gradually add in the Parmesan cheese, stirring until the sauce is smooth and creamy. Season with salt and pepper to taste.
- Combine
- Add the cooked pasta to the skillet with the Alfredo sauce, tossing to coat the pasta.
- Gently add in the cooked salmon and shrimp, folding them into the pasta without breaking the pieces.
- Serve
- Serve hot, garnished with fresh parsley and extra Parmesan if desired.
Tips
- For a smoky twist, try blackening the salmon and shrimp with a Cajun seasoning before adding them to the pasta.
- Add a squeeze of fresh lemon juice over the pasta before serving to brighten the flavors!
