Salmon and Shrimp Alfredo

Ingredients

  • For the Salmon & Shrimp:
    • 2 salmon fillets (skinless, cut into bite-sized pieces)
    • 8-10 large shrimp (peeled and deveined)
    • Salt and pepper to taste
    • 1 tablespoon olive oil
    • 1 tablespoon butter
    • 1 clove garlic (minced)
  • For the Alfredo Sauce:
    • 2 tablespoons butter
    • 3 cloves garlic (minced)
    • 1 1/2 cups heavy cream
    • 1 cup grated Parmesan cheese
    • Salt and pepper to taste
    • 1 tablespoon fresh parsley (chopped, for garnish)
  • For the Pasta:
    • 12 oz fettuccine or pasta of choice
    • Salt for pasta water

Instructions

  1. Prepare the Pasta
    • Cook pasta according to package instructions in salted water until al dente. Drain and set aside.
  2. Cook the Salmon & Shrimp
    • In a large skillet, heat olive oil and 1 tablespoon butter over medium heat.
    • Season salmon and shrimp with salt and pepper.
    • Add the salmon pieces to the skillet and cook for about 3-4 minutes on each side until golden and cooked through. Remove and set aside.
    • In the same skillet, add the shrimp and cook for 1-2 minutes on each side until pink and opaque. Remove and set aside.
  3. Make the Alfredo Sauce
    • In the same skillet, add 2 tablespoons of butter and minced garlic, cooking until fragrant (about 1 minute).
    • Pour in the heavy cream, stirring constantly. Bring to a gentle simmer, then lower the heat.
    • Gradually add in the Parmesan cheese, stirring until the sauce is smooth and creamy. Season with salt and pepper to taste.
  4. Combine
    • Add the cooked pasta to the skillet with the Alfredo sauce, tossing to coat the pasta.
    • Gently add in the cooked salmon and shrimp, folding them into the pasta without breaking the pieces.
  5. Serve
    • Serve hot, garnished with fresh parsley and extra Parmesan if desired.

Tips

  • For a smoky twist, try blackening the salmon and shrimp with a Cajun seasoning before adding them to the pasta.
  • Add a squeeze of fresh lemon juice over the pasta before serving to brighten the flavors!
