Ingredients:
- 1 lb sirloin steak, cut into bite-sized pieces
- 1 lb baby potatoes, halved or quartered
- 4 tablespoons butter, divided
- 4 cloves garlic, minced
- 1 teaspoon dried thyme (or fresh thyme, if available)
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Cook the Potatoes:
In a large skillet, heat 2 tablespoons of butter over medium heat. Add the baby potatoes, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and fork-tender. Remove the potatoes from the skillet and set aside. - Sear the Steak Bites:
In the same skillet, add the remaining 2 tablespoons of butter. Increase the heat to medium-high. Add the steak bites in a single layer (you may need to do this in batches) and season with salt and pepper. Sear for about 3-4 minutes until browned on all sides. - Add Garlic and Thyme:
Once the steak is cooked, add the minced garlic and thyme to the skillet. Cook for an additional minute, stirring to coat the steak bites in the garlic butter. - Combine with Potatoes:
Return the cooked potatoes to the skillet. Toss everything together to combine and heat through. - Serve:
