Garlic Butter Steak Bites & Potatoes

Ingredients:

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 1 lb baby potatoes, halved or quartered
  • 4 tablespoons butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme (or fresh thyme, if available)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Cook the Potatoes:
    In a large skillet, heat 2 tablespoons of butter over medium heat. Add the baby potatoes, season with salt and pepper, and cook for about 15-20 minutes, stirring occasionally, until they are golden brown and fork-tender. Remove the potatoes from the skillet and set aside.
  2. Sear the Steak Bites:
    In the same skillet, add the remaining 2 tablespoons of butter. Increase the heat to medium-high. Add the steak bites in a single layer (you may need to do this in batches) and season with salt and pepper. Sear for about 3-4 minutes until browned on all sides.
  3. Add Garlic and Thyme:
    Once the steak is cooked, add the minced garlic and thyme to the skillet. Cook for an additional minute, stirring to coat the steak bites in the garlic butter.
  4. Combine with Potatoes:
    Return the cooked potatoes to the skillet. Toss everything together to combine and heat through.
  5. Serve:
