Strawberry Shortcake Cheesecake Dessert Roll that looks just like sushi!

Ingredients

For the Sponge Cake:

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced

For Garnish:

  • Powdered sugar (for dusting)
  • Sliced strawberries (for decoration)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper and lightly grease it.
  2. Make the Sponge Cake:
    • In a mixing bowl, beat the eggs and granulated sugar together until thick and pale (about 5-7 minutes). Stir in the vanilla extract.
    • In a separate bowl, whisk together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
    • Spread the batter evenly in the prepared pan. Bake for 12-15 minutes, or until the cake is lightly golden and springs back when touched.
  3. Roll the Cake:
    • Once baked, remove the cake from the oven and let it cool in the pan for a few minutes. Then, carefully lift the cake out using the parchment paper and transfer it to a clean kitchen towel dusted with powdered sugar.
    • Roll the cake up tightly, starting from one short end, and let it cool completely in the towel.
  4. Prepare the Cheesecake Filling:
    • In a mixing bowl, beat the softened cream cheese and powdered sugar until smooth. In another bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture. Stir in the vanilla extract and diced strawberries.
  5. Assemble the Roll:
    • Once the cake is cool, unroll it gently and spread the cheesecake filling evenly over the surface, leaving a small border around the edges. Re-roll the cake carefully without the towel, and place it seam-side down on a serving platter.
  6. Garnish and Serve:
    • Dust the top of the roll with powdered sugar and decorate with additional sliced strawberries. Slice into pieces and serve!

Tips

  • Presentation: To make it look more like sushi, consider using a bamboo sushi mat for rolling and slice it into bite-sized pieces.
  • Variations: Feel free to add other fruits like blueberries or raspberries to the filling for a mixed berry flavor.
